I'm so old I can remember the days when I could walk into a country store and they would have big jars of pickles, beet eggs and hot sausage. I would want one of each but usually only had enough change for one. The big pickle usually won.
I was probably the only kid who preferred those big jars over the candy aisle.
I'm going to try your recipe, but on a much smaller scale. SO and I will both enjoy.
I'd use pickle beet juice instead of the water or maybe 1/2 water, 1/2 beet juice and leave the food coloring out.
My Nana just gave me some fresh cooked, sliced beets at lunch today...they're not seasoned or anything, guess what I'm doing tonight??

Whaaaat? Beets are awesome! Though I guess I can't expect you'd like them, they're low in calories and fat :chubbs:
