I'm so old I can remember the days when I could walk into a country store and they would have big jars of pickles, beet eggs and hot sausage. I would want one of each but usually only had enough change for one. The big pickle usually won.

I was probably the only kid who preferred those big jars over the candy aisle.

I'm going to try your recipe, but on a much smaller scale. SO and I will both enjoy. :yum: :geek: :cheers:

I'd use pickle beet juice instead of the water or maybe 1/2 water, 1/2 beet juice and leave the food coloring out.

For the BEST pickled eggs make it simple..

One or two jars of pickled beets, a dozen or so eggs.. place all TWO ingredients in a ziploc bag and place in refrigerator.. DONE!!

Or the way my dad did it.. Shove as many boiled eggs into a pickle jar that you can manage.. fill jar with vinegar.. DONE!!

All the other crap has already been done making the pickled beets, why are you doubling up the work?

Easy to make. Just cut up your onion of choice in rings, and put in a pickle jar when the pickles are gone. :drool:

My Nana just gave me some fresh cooked, sliced beets at lunch today...they're not seasoned or anything, guess what I'm doing tonight?? :yahoo:

Actually, I knew I had to make my own, cause I know, they are like potato chips, you can never have "just one". Besides the giant should make me suffer the consequences of this yumminess as well. :geek:
