zucchini

A friend gave me some squash and zucchini from their garden. I have already used the squash to make fried squash (dip in egg, flour/breadcrumbs, then fry in butter, yummy!), but what can I do with the zucchini? Can I fry it the same as the squash. They're pretty similiar in taste, aren't they?

Fry it up, same as the squash. Then put in a large bowl, add milk, cheddar cheese, and mix it up. Put mixture in a casserole dish and bake at 350 degrees for about 30 min. :yum: Or just eat it fried.

Slice it up and cook on the stove w/garlic, soy sauce, old bay and some Italian dressing. Or, cook it with some spaghetti/marina sauce/tomatoes. Super delish!!

Cut up in small cubes. Boil it on the stove with soy sauce, garlic, msg, gotchy jun (hot pepper paste), seseame oil, sugar.

Or make squash casserole with cheese, sourcream and ritz crackers on top:yum:

Cut in small pieces along with squash, onions, peppers, potatoes & mushrooms; toss all that with salt pepper & olive oil; then saulte it on the stove, use a grill pan on the grill or wrap in foil and cook on the grill or in the oven for about ½ hour. - YUMMY!

:howdy: I agree with cooking in stewed tomatoes....then use that instead of spaghetti sauce! Toss in an extra bay leaf, & 2 tbsps sugar too. If it were me, I'd add some big shrimp, too! :yum:
 
I just gave a neighbor 2 yellow squash and 3 or 4 monster zucchini from our garden on Saturday morning. Are you my neighbor?

I got mine last Wednesday (4th of July party). The zucchini are monster sized though.

We regularly get them 20" long and as big around as a softball. Very few seeds. Tried picking them earlier (smaller) and they were not ready yet. I think the biggest yet was 24" long.

Zucchini Bread

3 eggs
1/2 cup vegetable oil
2 cups sugar
1 teaspoon vanilla

Mix together.

Add:

2 cups shredded zucchini
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 1/2 teaspoon cinnamon
2/4 teaspoon nutmeg
1 cup raisins (optional)
1 cup nuts (optional)


Add zucchini to sugar mixture. Blend in flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add raisins and nuts and blend them in.

Grease 2 bread pans. Divide batter between them. Bake at 350°F. for about 1 hour.
