Just sneakin' around....
I'm not big on pancakes, usually too dry for me without dumping way too much syrup on them. Recently I discovered Japanese pancakes. Light, airy, fluffy, tastes a little eggy... really good. Takes a few extra minutes to prepare, but worth it.

1 1/4 cp flour
2 tabls sugar
2 1/2 teasp baking powder
1/2 teasp salt
Mix together.

1 egg
1 1/4 cp milk
3 tabls melted butter
Mix together.

Add wet ingredients to dry.

Yum-o

I always wanted to make my own, but it turns out I had swamp maples, not sugar maples. Did some research and birch syrup is supposed to be very good too. Unfortunately, not many birch stands around here.

Never had birch syrup, but birch “juice” or “water” is amaze-balls! I grew up drinking the stuff (from store), my older cousins used to go birch-tapping.

Next time I see it in a store I’ll get an extra jar for you, along with some sardines.

Our you can due your usual and wait for the middle on the smow storm and drive out for blueberry pancakes.
I loved going 4-wheeling in the deep snow when no one else could get out, and stopping at Dunkin for coffee and a French cruller, back when they were made fresh and thrown out after 4 hours.
