Best Crabcakes

Stoney's use to have the best crab cakes, but as of about a year ago, they seem to be processed, with more fillers than meat. It would be worth the drive for you to go to Jerry's in Prince Frederick.

Yep, the last time I had a stoney's crab cake it tasted like it was made with fish, probably rockfish.

The lighthouse has the best on he island, then the duck.

You have to go all out with the lump crab meat to get the best crab cake. And then go all out with the rest of the ingredients to justify buying lump crab meat.

1 lb crab meat (remember what I said about the lump)
1 tsp (or more) Old Bay
1 Tbsp mayo (NOT salad dressing)
4 Tbsp Toad Sweat (this is a key lime dessert hot sauce that was good for nothing until I realized it made a killer crab cake seasoning)
1 Tbsp melted butter (NOT fake stuff, real butter)
1/4 tsp dry mustard
2 eggs
1/2 cup crushed Ritz crackers - if the mixture is too loose add 1 crushed cracker at a time until you're liking it

Mix everything together except the crab meat. Then gently fold in the meat so you don't break up the lumps too much. Form into baseballs and fry in peanut oil until golden on both sides. (The baseballs will relax into a thick patty. Be careful turning them.) Sometimes I roll the baseballs in panko before frying just for some extra crunch.

I have eaten at all the places in the Solomos area. Ruddy Duck has the best followed by CD cafe. How long have been around here? Well I'm 80 yrs old and I have lived in Calvert Co. all my life.

And here is The Old Bay Recipe


Ingredients

2 slices dried bread, crusts removed

Small amount of milk

1 tablespoon mayonnaise

1 tablespoon Worcestershire sauce

1 tablespoon baking powder

1 tablespoon McCormick® Parsley Flakes

1 teaspoon Old Bay® Seasoning

1/4 teaspoon salt

1 egg beaten

1 pound lump crabmeat



Directions

Break bread into small pieces in large bowl. Moisten with milk. Add mayonnaise and Worcestershire sauce; mix well. Add remaining ingredients; mix lightly. Shape into 4 patties.

Refrigerate patties 30 minutes to help keep them together when cooking.

Broil or fry until golden-brown on both sides.

Dinner was good.
The crab cakes are all crab meat with mayonnaise, no filler.

Do you know where they get their crab meat?
 
Had some really good crab cakes at the Back Creek Bistro, I think better than Stoneys, which is very good.

flour
egg
cream
scallop
salt pepper spice

Combine an egg with some salt, pepper, and scallops in a blender. Add some cream, make a froth, chill it, and add it to you your crab with a DUSTING of flour. Spice as you desire. Make cakes, chill, and cook. Yum.

That is the most unique crab cake recipe I have ever heard of. Sounds delish. Have a few left over crabs from yesterday. Will try. Thanks.

They sound incredible.

I just went with this (all estimated):

1 lb crab meat
1 cup cracker meal
1 egg
3 T mayo
1 dijon mustard
1/2 t Old Bay
1 T dry parsley flakes

These were made from crabs given to my by a friend. They didn't need much spice, and no salt, as they were steamed with a mixture of these. When picking them, some of the cooking spice made it in with the meat.

I have to concur with the Ruddy Duck crab cake. My next favorite is at the Front Porch in Leonardtown.

I have no idea where Jerry gets his crab meat, but I do know that he has no problem paying top dollar for the best crab meat he can get.

I know where they get it, Jerry Jr. told me.

But I don't know if I should tell everybody.
It might disappoint some people.
