Threw a pork shoulder in the crockpot this morning with some homemade mojo marinade so we'll have some shredded carnitas by the time I get home. I'll serve it with cilantro rice, black beans, and guac, plus all the other toppings for some DIY Carnita Chipotle Bowls. It's a favorite in this house.

I'll need to find something gooood to make for breakfast this weekend with all the leftovers we will surely have.

Tonight is going to be Italian subs, I hate cooking on Fridays. Saturday will be oyster Rockefeller casserole and Sunday will be chili in the crockpot with cornbread on the side.

Well, its Oysters Rockefeller...but in a casserole dish. I use quart of oysters, butter, spinach, bacon, onions, cheddar cheese, garlic, old bay and panko bread crumbs.

Didn't do the chili on Sunday. Did Chicken and Dumplings instead. Delicious and perfect for a wet, dreary Sunday!!

Last night we grilled pork chops that I had rubbed with maple syrup and seasoned with Tony Chachere's. Then wolfed a big tub of popcorn at the movie.

Tonight Monello made the most wonderful beef stew with roasted root vegetables. It's been raining and cold here and MAN that stew hit the spot.

Last night was chicken and veggie stir fry over jasmine rice. Leftovers tonight. Tomorrow is pork chops with apples and sauerkraut.
