Twice baked cheeseburger potatoes

Bake the potato and let it cool
Cut the potato in half lengthwise and scoop out the flesh, leaving the skin and a little potato intact so you can fill it
Mash up the flesh with milk, sour cream and butter, and then mix in crumbled bacon and shredded cheese
Fill the potato shells with cooked ground beef and top with half a slice of American cheese
Pile the mashed potato mixture on top
Bake at 350 for 20 minutes or until hot through

I happened to have some crispy fried pickle chips (find them in the salad topping section) so I threw some of those on top as well.

Wrapped up the evening with a glass of eggnog and a double shot of bourbon while I watched the news.

Ruby had eggnog without bourbon.

She kind of gave me the side eye for making hers plain.
I put the rest of mine in the freezer. I usually need an eggnog reminder in the summer. The rest goes down the drain tomorrow.
