Happy St. Patricks day

Have you seen the price of Corned beef.
About the only time we can get it in the grocery store is around St. Patricks day.
Personally---I like it. Corned beef and cabbage.
Corned beef is made from the cheapest cut of beef there is mostly---the brisket.
$5.89 at Walmart. I hope no one buys it this year so after St. Paddy's day it will go on sale for a decent price, and I can stock up.

I caught it on sale last week at Safeway for I think $3.99 lb.
I picked up 2 and put them in my freezer. I like to use them to make fresh corned beef hash for breakfast. I put them in the crock pot on low overnight and then chunk/shred it in the morning and throw in a pan with either fresh cut potatoes or frozen O’Brien potatoes.

My husband is on travel and I texted him that I bought four and they are in the freezer. They were $1.69 a lb at Giant. He loves to slow cook them in the crock pot and then makes the BEST reuban sandwiches. We always stock up when they are on sale.

Giant had Kerrygold Irish butter on super sale for St. Patrick's Day for the past week ... 2 for $4. Normally $4.99 each. Now that's a real savings.

it freezes very good, but wrap it well because it will sponge up any odors in the freezer.
