Low Carb Diet

If you're looking for good no/low carb recipes, check out the South Beach Diet cookbooks, particularly the Quick and Easy one (it's the yellow one, and most of the recipes take less than 30 minutes). It's hands down the best cookbook I've ever used. The meals are so flavorful, easy and even the 8 year old likes them.

200 easy solutions for everyday meals

I have been trying things I have never eaten before... and it puts flavor in your day instead of eating meat, cheese and eggs all the time.

It is also recommended by my doctor.

I know, it sounds awful. One thing I loved about Atkins is you could eat crap like this and still lose weight.

I was a strict low-carb follower for years but as soon as I went off of it, the weight came back... Personally, I'd rather do the "South Beach" diet. I eat all the same things I had on Adkins but have other choices and don't get so bored. It is also better for you. The Adkins diet is NOT anything you should do long-term.

I just wish we had a whole foods store locally... like they do in Annapolis.

We had the pesto chicken last week (foodgasms ) and tonight we had the goat cheese and spinach stuffed chicken with cannellini bean salad and sauteed zucchini. Some of it might be no-brainer stuff, but I grew up in a meat and potatoes house so the whole Mediterranean style of eating that South Beach pushes was new to me. We're not doing South Beach 100% because I doubt I could give up sugar and carbs for 2 weeks, but most of our dinners are that Mediterranean style.

Oh, and their recipe for artichoke dip is really good. I made it at Thanksgiving and my mom flipped over it. She's made it 3 times since then.

I don't do Atkins anymore. I did it for about 6 months probably back during the Atkins craze and then got bored with it.

I do something else now that works and is healthy.

I get frustrated because people don't actually read the Atkins book...they just "hear" someone say to eat bacon and eggs and they do it, get frustrated, and stop. It isn't bacon and eggs all the time. Atkins is pretty similar to south beach..in that carbs are not forbidden...and good healthy whole foods are encouraged. Lean meats and lots of veggies. That is what any healthy diet should push anyway. Only Atkins isn't afraid of fat which is very healthy for your skin, nails, and brain. The 20 grams of carbs phase is only sup to last 2 weeks..then it gradually rises until you find a good amount of carbs to continue weight loss, or once you achieve your goal weight...to keep your weight steady. Most adults end up with a good 100-200 grams byt he time they are sustaining their weight loss. Which is perfectly healthy and doable. Athletes and body builders swear by ketogenic diets, though most cycle through them...and Atkins is just a good healthy approach to eating, which is helped by a good period of rapid weight loss to motivate.

Well into week two of lo carb and the energy level is great. The post carb coma is not missed, at all, and the cravings are manageable. For instance, took daughter #3 to breakfast this AM to Bob Evens and had an omelet with all the meats and cheese and veggies, told the waitress no bread, forgot to tell her no taters and there they sat while I ate the rest.

I wanted to eat them potatoes but, it was not horrible and I did have about two forkfuls of them, if that. So, 45 minutes later, I don't lament not having them, at all. Energy level is great, feel better for having not eaten them both physically and mentally.

It's all good! :yahoo:

And lost 6-7 pounds so far.

Now, one thing I have noticed is that I don't sleep as soundly. The carb coma used to take care of that. Interesting.

That is interesting, because I sleep better when I lo carb.

Huh.

Allow me to clarify. I sleep well. I just don't sleep as deeply or as long. I think it's the energy thing. I'll get up at 3:30 and work for awhile. And I do feel better when I get up now.

On carbs, I'd be in a coma and be a wreck for 15 min every AM.

The real problem is I find now that my mind is more active. Maybe that's the thing with me? If there is anything to consider/worry about etc, my mind is RACING and that disturbs my sleep. However, when I do get to sleep, I sleep well and am rested in the morning.

Does that make any sense? :buddies:

Nope. Doesn't make sense to me. Not sleeping long or deep does not sound like sleeping well, but if it's good enough for you, then it's good enough for you.

When I carb, I toss and turn for quite a while before I can fall asleep, then wake several times during the night. When I lo carb, I fall asleep in about 5 minutes and may get up once during the night. If I don't drink too much beverage in the evening, I'll sleep through without waking up, usually waking just before the alarm sounds.

OK, I set out yesterday to drink beer all afternoon watching football. I iced up a case of Shiner, had tortilla chips, salsa, meats, cheeses, etc and...

...when beer drinking time came around, I simply had NO interest. Not even a little. :tap:

Now, I've had two beers on two occasions, both out, drafts, since I started this three weeks ago and enjoyed them but did notice that 2 was good. I mentioned this earlier. I had a bunch of beer the other night out to dinner with my dd daughter home from school and had a few more when we got home and thoroughly enjoyed so, it's not like I've lost my taste for beer but, I have noticed that, day in, day out, just not interested and, now this. It's borderline un American.

:jameo:

Add to that that, no jokes, here, my mind feels clearer and I feel calmer, way less highs and lows. I more now feel good all the time.

Varia and I were discussing carbs from the context of narcotic effect and, for sure, there are highs and crashes from them but, are the negatives of carbs, (too many carbs and bad ones, as per my old diet) even deeper?

I'm just experiencing an improvement in quality of life through a simple, but large, diet change that is not only seeing me lose weight and feel better but, is effortless. It seems to be promoting itself, self supporting.

Personally, it's the type of carbs......Training for 4-6 hours a day 5-6 days a week, it's impossible to not have them. 90% of my carbs come from complex carbs... Vegetable and Sweet Potatoes.....after lifting and during training I get a Gatorade in to stunt cortisol production, which breaks down muscle...and gives me something in the tank to keep going....

When I have my weekly cheat meal, I can def feel the instant high and then the crappy crash.....I used to have the cheat meal to keep my sanity....but now it's almost like a reminder of how crappy high fat and simple carbs make me feel....

I do however, still enjoy eating next to raw steaks with my barehands....it's good for the test levels and makes me feel like a caveman:killingme

I can relate to this. I started doing low carb - 10-1/2 years ago. I wasn't crazy strict. It was just a matter of following a little of this and a little of that information I got from reading stuff online. I also quit smoking at that same time - and began the exercising on a regular basis. I started feeling good right away - so it could have been going low carb or a combination of all three of those.

Since I had the Things, and they were still early bird risers and I was the one who always had to get up with them, I didn't really do a lot of drinking anyway. Who wants to get up and face kids with a hangover?! But I also found that when I got together with family or friends, that I didn't WANT to drink very much. I am still like that. I rarely drink here - except for a glass or 2 of wine once in a while. But I do enjoy drinking socially, and except for one throwdown at a party (once in 10 years!)where I got really toasted, I tend not to drink all that much at all.
