Over biscuits!
I usually use the sage sausage and add a bit of poultry seasoning when I add the flour. Vrai's right - dumping the flour onto the browned sausage and stirring it around means no lumps and the flour kind of sucks up all the grease. Add the milk and it thickens up and releases flavors for the yummiest breakfast on earth.
And whoever the guy is who said use a package of gravy mix needs to be hit in the head by a dozen stale biscuits. Good lord, I'm from the midwest and even I know that prepackaged stuff is crap! Next he'll be saying try to substitute a can of cream of mushroom soup!
