I like mine rare, but not raw. I've had raw, cold in the middle served to me too many times, so I order medium rare.
At the Teppan-Yaki places (Sakura, Okada, Asahi) I order rare since every piece gets a good warming, and MR is actually grey.
By the way, health wise, as long as all exposed surfaces have been heated the meat is generally safe. The threat with beef is e-coli, not tapeworms. It is killed with a quick searing of exposed surfaces.
Ground beef should be cooked more than steak because the e-coli can be mixed all the way into the middle, and survives at medium rare temperatures. That doesn't stop me from eating rare burgers, but I'm healthy enough to survive a little e-coli, and I could really stand to lose the weight.
