Sausage Lentil Soup

1 lb-ish of hot Italian sausage
1 small onion, chopped
3 cloves of garlic, chopped
2 carrots, chopped
2 stalks of celery, chopped
3 cans of chicken broth
2 cans of diced tomatoes
2 cups dried lentils
1 tsp salt
2 tsp black pepper
1 tsp cayenne
2 tsp oregano
2 tsp basil
2 tsp thyme
1 Tbsp parsley

Squeeze the sausage out of its casing (if it's links), brown and chop in decent sized chunks, but not too big. Drain the fat if there's a lot, otherwise a little fat never hurt anyone. Then dump everything else in the pot and bring to a boil. Reduce heat and simmer for 1 hour.

I'm serving it with homemade 9-grain bread :drool:
My sis is coming over to visit next weekend. I think I'll make it for her...:drool: I've don't think I've ever had a lentil before tho...:blushing: :eyebrow:

Mexican Chicken Soup From Food Network Kitchens

If you can't find posole, which is also called hominy, feel free to substitute frozen corn kernels.


2 tablespoons canola oil
1 medium onion, chopped
1 medium rib celery, chopped
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon ground cumin
6 cups chicken broth, low-sodium canned
1/4 cup canned green chiles
1 (15 1/2-ounce) can posole, drained or frozen corn kernels
4 canned whole peeled tomatoes, roughly chopped
1 teaspoon dried oregano
1 cup cooked skinless shredded chicken breast (about 4 ounces)
1/4 cup chopped fresh cilantro leaves
Juice of 1 lime
Kosher salt and freshly ground black pepper

Heat the oil in a medium saucepan over medium heat. Add the onion, celery, garlic, chili powder, and cumin, and cook until the onion softens, about 5 minutes. Add the chicken broth, bring to a boil, reduce the heat slightly, and simmer, uncovered, for 10 minutes. Add the green chiles, posole, tomatoes, and oregano and cook for another 5 minutes.

Pull the saucepan from the heat and stir in the chicken, cilantro leaves, and lime juice. Season, to taste, with salt and pepper. Serve hot.

I made the Sausage Lentil soup tonight for dinner and it was excellent! :yay:

The kids loved it! Even picky Thing2, who went back for seconds! :lol:

I have Italian beef in the crock pot. It will get turned into a panini with some of the schmancy cheese I brought back from NYC.

The house smells like heaven! I just tried it and the lentils need a little more time.

I made it more spicy then last time, used Italian sausage AND some Rotel, so I hope the Things will still eat it. I think it's delish. I didn't make my bread, but I baked goodies today, so I didn't have time! :lol:

I need to make a pot of that soup - it's perfect winter comfort food.

:yay: It soothes the wild Things! They love it...

Thing2 ate a big bowl & could actually taste it - even tho' his sinuses were cwogged all up before eating. :frown:

Speaking of comfort food, I think it might be time for Tater Tot Casserole soon!! I'll be at a (nearly) all day school event on Saturday - I think that will perfect for Sat. night's dinner!

how do you make tater tot casserole? That sounds good.

That sounds really good - I'll have to try that next time I make it. I've done it with spinach before, but kale has a bit more zip.

Don't put the kale in until late in the process. Too soon and the flavor and texture boils away. And no, I didn't find this out on my own.
