Made a variation of this on Saturday. Slightly different ingredients, and treated ingredients differently just to test it out for taste. After browning the sausage good, I seasoned and sweated the carrots and celery, then held them on the side. Caramelized two onions. When they were nearly done, I cleared a space in the center of the pan to heat up and tossed in the garlic just before deglazing (a good splash of white wine) and adding the liquids and other ingredients.

At the end, I added gnocchi for a couple minutes, then some spinach leaves until they wilted.

Sprinkled the Parm over the dish, and toasted some bread with garlic/thyme.

Delicious.
