yumm..that looks good..curious about the cottage cheese though..i could probably subsitute cream cheese..will I miss something if I do? The texture of cottage cheese is a little iffy to me at the moment...lol

The recipe is unhealthy enough as is. I've never made it without the cottage cheese, but it would probably be fine. It's a buttery, garlicky, sinful mess all on it's own. I use small curd fat-free cottage cheese. You can't taste it but you can see it.

What do you think of squeeze cheese? I'm a big fan.

OMG. I made D go out and get me squeeze cheese last week...and Bugels to go along with it. They look like cute little ice cream cones when put together correctly. It's been years since I've wanted it but these hot flash cravings are as bad as when I was pregnant.

This recipe sounds really good, I love spinach and I'm always looking for new ways to make it. The flavor of the cream cheese may be too strong, not sure. I was wondering if maybe ricotta cheese would be good in place of the cottage cheese? I'm not a huge fan of cottage cheese. But I don't know if the texture of ricotta would be much better for you?

It would probably be tasty with ricotta. I use cottage cheese and spinach in my lasagna instead of the traditional ricotta layer (same recipe as the casserole)

I do think the recipe would be good with nothing other than the Parmesan, but I'm not going to risk my sister's wrath if I change the recipe and will keep as is. I can visualize her hiding the crock once the guests arrive.

I bought some today with Triscuits. :lmao: I call it easy cheese.

Oh yeah, you can find diabetes-friendly pies all over the internet. It's not really the pie that gets me... It's not even the diabetes that gets me... it's the sodium. My diet is very strictly low-sodium... my daily limit of sodium is like 2000 mg or something like that. I also have to lay off fried foods.

My favorite foods are the stuffing, corn, taters, turkey and fried mushrooms, and I like to saturate them all in gravy. A plate like that will attack all of my current conditions.



But... I'd rather see my kids next Thanksgiving than end up buried by Christmas because I can't control myself. So... I'm going to enjoy what I get, even if there's no gravy or layers upon layers of turkey skins. The good news is that I didn't eat in the hospital for 3 weeks, and my stomach has shrunk to the size of a thimble. It's very surprising how little it takes to satisfy my appitite these days, so maybe on Thanksgiving, I'll be content with my modified dinner portions.

:cds: Yeah, it sucks to have to happen right at the holidays! But you're right - your kids are the most important thing! And you're right, you can adjust the way you eat, even though at first it will be hard. It's just a lifestyle change (as they say) and you will eventually get used to it.
