OMG yum!!! Share the recipe, please? I have several jars of peri peri seasoning that I use all the time - didn't realize there was an actual dish that you make with it.
Peri peri is actually a chili that you get in South Africa I believe its called tiny"birds eye" chiles. The sauce/marinade is what you for baking, grilling broiling. Once you know how to make the base sauce or like a particluar base sauce recipe then you can play around with other ingredients.
Here is the Authentic South African recipe: ( yeilds 1 cup)
2Tbsp. red chili paste or 10 red hot chiles, such as thai
1/2 cup fresh lemon juice
2 Tbsp. cilantro
1 Tbsp. parsley
5 chopped garlic cloves
1/2 tsp. salt
1/2 cup olive or peanut oil
Put all the ingredints except, oil in a blender and blend for 2 minutes. Then, slowly add the oil until it is all incorporated. Put it in an airtight jar at room temp if using the same day or fridge for upto3 weeks. You can use this sauce on beef, chicken seafood, pork.
This recipe is from Angola.
4Tbsp. lemon juice
5 Tbsp. oilive oil
4 Tbsp. coursely ground red chilies
2 Tbsp. garlic salt
1 Tbsp. garlic powder
wisk everything together.
This is the typical way peri peri sauce is made with a slight variation depending upon which region the recipe is from. I take it further and play with the sauce by adding other ingredients. I take 1/2 cup of the first recipe and to that i add the following:
2 Tbsp. vinegar
2 tbsp. soy sauce
2 tbsp. worstershire sauce
2 tbsp. lemon juice
1 tsp. salt (taste the sauce to see if you need to add the salt)
4 Tbsp. olive oil
wisk all the ingredients. I whole chicken cut up into 4 and poke with a fork. Marinate with this sauce for at least an hour. I like to merinate is for 24-48 hours. the long the tender the meat. Reserve the marinade and cook it down ina sauce pan till it is thick and then after the chicken is one put some is the reduced sauce on the chicken before you serve.
If the peri peri sauce is too spicy. make some yogurt relish. Simple one would be
2 cups yogurt, put in a sieve and drain the liquid for 30 minutes
1/2 a diced cucumber
1 tomato, seeded and diced
salt and black pepper to taste
2-3 Tbsp. chopped cilantro, optional
mix all the ingredients together.
