2nd round of Ho-made bean soup...ever better today than yesterday..

A friend on FB uses that term all the time, not sure if she originated it but it still makes me chuckle.

Stopped at Tex Roadhouse while xmas shopping down there last month. I've only been there 3 or 4 times, service and food was topnotch every time. If it was closer, it would be a regular stop.

The first time I went to Austin my son promised to take me to the best rib place in town....

Had a late-lunch, early dinner at a restaurant on the Marshwalk - Inlet Prohibition Company. Had oysters Rockefeller and Shrimp and grits.
They had an awesome blueberry wheat beer on tap too.

Toasted ham and cheese sandwiches tonight, dill pickles, too.

Last night bacon wrapped oysters and fried oysters with fries. They were great

I was going to make Ricotta and Spinach stuffed shells on Sunday, but, couldn't find the large shells at Food Lion or Shoppers, so, I used lasagna noodles and make them into roll ups. Had left overs last night and glazed ham steaks tonight.

Cooked medium pasta shells and a mix of chickpeas, diced tomatoes, diced red onion, minced garlic and Italian herb mix for dinner.

I worked in the yard etc all morning while the laundry was going, did my 2023 business tax crap, then went grocery shopping. Picked up a cheesesteak at Jersey Mike's for dinner because damn it I earned it.

Grilled cheese & pepperoni sandwich.

Ingredients and preparation for tonight's dinner.
1 lb. medium shell pasta cooked per box instructions to al dente.
I mixed in 3 rounded Tbsps. of chicken stock base in the water to add a little flavor.
15 oz. can of chickpeas, drained
14.5 oz. can of petite diced tomatoes with any juice
2 heaping Tbsps. minced garlic
4 heaping Tbsps. diced red onion
2 Tbsps. Italian herb mix
Mixed these together in a pot and heat on medium flame while the pasta cooked.
Drain the pasta, but do not rinse, Stir everything together in the pasta pot.
Garnish with grated cheese upon serving.

Still going strong, in an open garden. I have 2 heads of cabbage still to be used.
