I can't believe I didn't have any hotdogs in the house to make Happy Halloweenies! I tried to make up for it by opening a jar of ham and bean soup, but it just feels wrong!
My daughter saved the day!!! All is right in my world and the Great Pumpkin can rest easy knowing that Happy Halloweenies were properly consumed. My world may not be as right tomorrow after two bean dinners...

Ah, but mine is better. My world-not-so-famous turkey chili. :lol:

And after a long time trying different mixes, I finally found a corn bread recipe that I like that doesn't crumble apart when you butter it and tastes really good.
1 packet of Jiffy mix (using honey flavor tonight)
Follow the recipe on the box, except don't use 1/3 cup of milk. Instead add a small can of creamed corn and just a splash of milk. Pour into an 8x8 glass dish that was sprayed with baking spray. Box says 400* for 16-20, I reduce heat to 350 and bake for 35 (toaster oven, so I drop the heat for nearly everything anyway or it cooks unevenly).

Yeah, I can’t do turkey chili.

That just makes me twitch.

Jiffy cornbread are great. Usually mix up 2 to 3 packages of it at once so I have cornbread for a few days.

Steamed shrimp, previously frozen cheddar bay biscuits, and locally grown orange cauliflower steamed and topped with butter and Italian seasoned bread crumps.

Fish and cacio e pepe. The fish was bland and way under seasoned, but the pasta was great. Fortunately I have another piece of cod so I can try again tomorrow.
Not familiar with cacio e pepe but if you up for experimenting you can try some garlic butter and fresh parsley, or even a marinade of a little ginger, lime, touch of soy sauce, minced shallot and white pepper.
