Yeah, I put it off today. Spent most of my morning cleaning up the basement.

Looks like it’s gonna be a can of clam chowder, and enchiladas tomorrow.
Clam chowder is good too. I always add extra clams to the canned chowder..makes it much better.

Not sure what I want, yet.

Just sneakin' around....
Been working in the garage all day, couldn't find anything I wanted. Discovered some Stouffer's salisbury steak and mac&cheese in the freezer, so that's dinner.

How was it?

I roll mine up and put them in a baking pan, cover with enchilada sauce, cover that with cheese, and bake until bubbly.
Yeah, that was the goal except I ran out of red sauce.

But actually, they were really good. Made with beef, peppers and onions. Might try chicken next time but season differently.

Mexican rice to go along with it, package stuff, and some iced tea and a German shepherd looking irritated, wondering why she couldn’t have some.

Chicken of the trees, pan fried in butter and olive oil after seasoning, deglazed the pan with red wine vinegar and put the drippings in the pressure cooker. Baked the browned pieces for 30 min at 400 and then pressure cooked them with the rice pilaf for 30 min.

Just like I told my kids when they asked if I eat light bulbs, that's not what I meant when I told Mommy if she turned the light out I'd eat it.
