Where did you find chili oil? I’ve been hunting that stuff down for almost 6 months now without success.
There's a store in downtown Fredericksburg, VA called Taste Oil Vinegar Spice where I usually get mine. They ship or you can go in person and try samples first. There is also a similar place in downtown Annapolis but I can't remember the name of it.

Blue Wind also carries oils and vinegars.

Had a late lunch at 3:00 so just now got hungry. I'm having an Omaha Steak stuffed baked potato with colby jack cheese sprinkled over it.

My wife and I make our own hot pepper oil.

1 cup peanut oil, 1/4 cup sesame oil, 2 Tbsp. ground red pepper.

Heat the oil to 365F, remove from heat, stir in the pepper until dissolved, once the oil is cool, filter into a small bottle.
We use a funnel with a coffee filter.

Usually that is a base for her take on Chinese hot mustard sauce.

But, if you'd like to make a good chili oil, I like this blog for ideas: https://thewoksoflife.com/how-to-make-chili-oil/
