What's for dinner?

I had a super busy day today so all I had for dinner was Tapatio ramen and some gummy bears earlier. And I had a fun-size York peppermint patty. But my breakfast was pretty tasty - fried egg and chipotle bacon on grilled seed bread. I took a multivitamin so I don't die of malnutrition.

In Pennsylvania they call that "slippery pot pie". My downstairs neighbor used to make it and it was some kinda good.
I've heard it called that and also "slick pot pie." And yes, it was some kind of good last night. Used boneless thighs for the chicken and I was in heaven! But I did cheat a bit and used the frozen thin dumplings instead of making my own.

Had some leftover skettis, so made an American Chop Suey. Pasta, onion, ground beef in tomato soup, baked. I had been making it from memory, but it never really quite tasted the same as I remember in my childhood. Recently I found my mom's original recipe, so I followed that, hoping to rediscover the flavor.

My method: Brown the meat in a non-stick pan, drain it, add onion and seasonings, add that to the pasta, then add the tomato soup, bake

My mom's recipe: put 4 tablespoons of Crisco in a pan and melt it. :eyebrow: Add onions.
When they start browning and caramelizing, add the beef and salt (lots), cook through. Layer, with the pasta and tomato soup. No instructions to drain the fat. Ok, seeing a pattern here..... Into the oven, bake.

Yup, much more like I remember, much closer. I think the Campbell's Soup is different these days.

Tonight was Bingo night, so I had a mini Twix bar and two cups of vanilla chai tea. I wish I had some KFC wings but I'm too lazy to drive the 5 miles to get them.

I think the Campbell's Soup is different these days.

The cream of tomato especially. I want to say in the 80s they changed the recipe or something because it's not as rich as it was when we were kids. The chicken noodle soup is different, too. Alphabet soup was a staple in my childhood diet and now you can't hardly find it anymore.

Mixed green salad with red onions and tomato, topped with diced fried chicken and chipotle ranch dressing.

One of those Dinty Moore meals - meatloaf and mashed potatoes. And now I'm eating gummy bears.
