Ruby had six eggs and two pieces of sausage

Then stood beside the table, looking at me like Oliver twist.

I always make extra when I make chili, and I made chili and cornbread last night.

For future breakfasts, I am heading to the grocery store to pick up asparagus, swiss cheese and pie shells to make some quiches. I bought some fresh free range eggs from a friend and have other ingredients already on hand (ham, mushrooms, onion). The quiche freeze well. I try to take advantage when asparagus is reasonably priced and in season.
It is a damp and chilly day so perfect weather for making them :)

What is the secret to making a quiche with a crunchy bottom crust?
Though I've never done the egg wash (I will try it next time!), as Merlin said, pre bake the pie crusts for about 10 minutes. I used to make my own crusts but find the store bought deep dish ones easier!
