The other night we had spaghetti squash lasagna, and I had leftover makings. So tonight we're having penne lasagna, and Monello is sauteeing some kale for a side dish. Dinner should be ready in 10 mins or so and I'm STARVING.

I stirred together cheese, shredded chicken, sour cream, ranch dressing, blue cheese and hot sauce, then dumped it into pizza crust from a can. Bake according to directions on dough can, which is about 25 minutes. I've done this with marinara sauce and meat/ cheese, much like a true calzone. You can make it vegetarian, Greek, Asian... any way you want.

Yummy...putting it on the to do list for dinner. Thanks.

Lengthy but good. Crock Pot Apricot chicken.

6 boneless chicken breasts
24 oz of Apricot preserves
1 package of onion soup mix

Season chicken put in crock pot use whatever spices, salt pepper, you normally season chicken with
mix onion soup mix and 24 oz of apricot preserves in a bowl
pour over chicken in crock pot
put crock pot on low for 5 hours
serve over white or brown rice.

Serve with a salad.

Monello has gone fishin' but I have pork chops and chicken for him to choose from, plus we have leftover potatoes and cauliflower from the other night, or I can stir fry some veggies. We're freestyling tonight.

Nick's has a sale on lump crabmeat this week. Cream of crab soup and crab cakes. First time I used the Old Bay recipe for the soup! Yummo!

Marinated skirt steak, seared in a very hot skillet, sliced thin, simmered in homemade taco sauce(some sauce reserved) soft taco shells, the usual taco toppings.

I experimented last night and made what basically turned out to be a bean hand pie. I feel bad for my husband's co-workers today. :geek:

:lmao: Made ham & bean soup a few weeks ago. Ate it for 3 days...needless to say...it wasn't pleasant.

My husband makes the best ham and bean soup and when we have a chilly day I make him cook some and we eat it for a few days, and yest, it's not pleasant. But I still love that soup.

Tonight, lasagna and garlic knots.
