@PrchJrkr - have you ever gotten anything from Schwan's? I was never one to buy their products, but since they stop by our office every other week, I took a look through their catalog. They have a great line of "healthier" choices and are super easy to pop in the oven or toaster oven if you don't have time to cook OR are only cooking for 1.

I do cook sometimes. :lol: That's just what I had that was convenient. I usually eat lots of fruit, and always have a vegetable with my supper. I just go through phases. I helped a neighbor get in some wood and worked on a boat after work and didn't leave enough time to cook something healthy. It's all about priorities.

And I do appreciate it. For all the joking about the food I eat, I do try to balance it out. Of course, I consider that big piece of cheesecake I had for dessert my dairy for the day.:roflmao:

It being a Friday, I guess I'm going to hell. I grilled a t-bone over charcoal, warmed crusty rolls, and opened a bag of salad.

somebody had a small version of those that they used to sell in the commissary. I swear I got tipsy from them. Berticillis or something like that. They quit selling them dammit. They were deliciousioso.
I don't know who made it, but they did a fantastic job!

I made meat loaf, mashed potatoes, mixed vegetables and rolls. For once I actually cooked an entire meal. Grandson is back for the weekend. I just can't cook all that just for me. Not that I can't, I don't want to.

I find it harder and harder to get into cooking for one. It's just so easy to fry a burger and throw some fries in the toaster oven. My stove has been out of gas for almost a month. I'm starting to miss it. :lol:

It's very hard. I don't want to bother. I do make a lot of crock pot dishes, all in one skillet dishes and always make enough for leftovers the next day.

And, to stay on topic. Dinner tonight was grilled baby backs, homemade potato salad, and corn on the cob.

Gotta stop thinking in terms of small meals, because it is a pain. I make meals that can be used for days, multiple meals. For example, I roasted a whole chicken on the grill. No mess at all, took about the same time to roast it as it would to make a couple of thighs in the oven. But from that roast I got 2 meals of roasted legs, thighs and wings with stuffing. Then there was the great chicken sammiches for lunch for a couple of days. Last night was an open faced hot chicken sammich in gravy. Today, I'll throw the remains in a big pot and make chicken soup which will last for a bunch of meals. Most of it will get frozen for another time.

Same with Italian foods. If you make a tray of manicotti or lasagna, make a big tray, do it once and big. Take what you want for your meal, divide up and freeze the rest. Then it's a simple reheat for a good meal.
