Lamb

I am certainly glad that it was in my edition, I use it a couple of times a year. Hope that you enjoy your lamb with it.
Well Easter is coming, and wife wants a rib roast this time. I think it would be a perfect time to cook one of the many lamb roasts I have tucked away in the garage freezer. Thinking of preparing a smaller butterflied lamb I have stashed away. Once marinated - what do I do? Smoke? Oven roast? High heat? Grill?

I usually cook mine on the grille I also add wet rosemary sprigs to the coals. Just try not to overcook it, I hate any well-done meat. If you grill regularly, I'm pretty sure you already know this, but I always put the thickest part on the grill 1st then add the thinner pieces!

My problem with grills is - eventually - at least for ME - they just don't cook evenly. Stuff gets into the - gas pipes - and no matter how I scrub them - I just have to babysit it carefully. And the damned thing is only a couple years old. But I think it's one way I can cook it without my wife saying "WHY ARE YOU COOKING THAT THING?? NO ONE WILL EAT IT!"

Sorry bro I use a charcoal grille. As far as your grill, buy a couple new burners, or if you want to save money pull them out and put compressed air on them. Usually, it is just rust and spider webs doing the blocking.

Honestly, thinking about getting one for a while now - used to be really easy to smoke food in a charcoal grill - just toss the wet chips on.
I was dumb enough to buy chips when I bought the smoker, which uses pellets - so there's an idea.

I have to say, I wonder that same thing when you post about recipes for food no one in your family likes.
Well three things - one, she's wrong - if she doesn't like it, she thinks no one will. My daughter had octopus last night at a restaurant - which I like, also. Happens all the time. I sometimes serve simple things like mac and ground beef - or ground beef and baked beans (mixed together). She won't eat it - but my fussy son LOVES it.

The other is - I do most of the cooking. And I cook stuff like PASTRAMI - and goose - and salmon - and oysters - and **I** like them. It's ok for ME to cook whateever I like, especially if I am not serving it to everyone.

And lastly - last time I cooked lamb - the kids loved it.

You could have led with this and been good. :yay: Cook's choice.

ground beef and baked beans (mixed together)

When I was a young bride and we had no money this was a staple at my house and we called it "Bachelor's Chicken". I don't know why, it's just the first time I ever ate it that's what they called it.

My next to last squeeze was Adventist their dietary needs were pretty restrictive when I was growing up so I thought hers would be too. Boy was I surprised, that lady and her daughter would eat the dining room table if left alone with it! Ham, duck, catfish, goose, shrimp, soft and hard crabs, scallops didn't matter it would disappear magically.

I used to go to their store in Takoma Park regularly - when I was vegetarian. I take it they were not?

I grew up in Adventist Mecca, Takoma Park. Yeah, growing up all the Adventists were vegetarians, didn't wear jewelry (exception wedding ring) make-up or dance. Apparently, all that stuff is old school now.

I had a roommate from Trinidad who was Adventist - in addition to his STRONG Trinidad accent, he had a horrible lisp, so I had to listen carefully.

He introduced me to all of the stuff they eat - and I learned that my dentist used to be married to an Adventist - so we've all talked about the "meat substitutes" (dentist said he would pronounce 'seitan' as 'Satan' because he couldn't stand it) they used, which I always thought weird, because if you're not supposed to eat it - why make substitutes?

The Adventist Book Store was one of the very best places to buy bibles and such - and since I was vegetarian for about five years, best place for food. I also used to frequent an herb shop in College Park. My gut says THAT one probably doesn't exist any more.

Yeah, I used to go to my favorite herb shop there too, I believe it was called Maggie's Farm.
