You want to take the animal in and have it butchered, or you want to go and pick out exactly what you want?

Not sure where you're at, but McKay's has butchers on site at their stores and will cut meat to your wishes. We use them quite often.
 
Nick's of Clinton in Waldorf will custom cut anything you want. Good prices. There's a butcher shop in the building next to Lighthouse Liquors in Charlotte Hall (never been in there). You want a whole pig? Go directly to the Amish/Menonite.

Since we are on the subject of bulk meat, does anyone know how much is the cost for an entire pig or half pig cut up. Varies with size of course. I also read that two-four families can split a pig cost. Is this really cost effective, my guess would be yes compared to getting packs of bacon etc. from grocery stores.

If bought off a farm, around $2.50 /lb live weight, $50ish slaughter fee + butcher gets ~ $0.60/lb processing (making sausages is extra). One pig does not have as many parts as you may think, there are only 2 racks of ribs in one pig.
