Thanksgiving & Christmas Dinner

Just sneakin' around....
Had a half turkey in the freezer, took it out to defrost. I had cut it in half and put this half in a vacuum sealed bag. Apparently had a leak, wasn't vacuum sealed anymore, and had lots of ice on the bird. :ohwell: Hoping after a slow defrost it will be ok, and not dry.

Going to brine it, then smoke it.

We're actually dialing it DOWN this time around, because we only have ONE guest and the rest of the family - so just fried turkey, spiral ham, green bean casserole, sweet potatoes, mashed red potatoes, homemade mac and cheese, stuffing, pumpkin and apple pie - and - I think that's it. We usually have so much stuff, you could never get a bit of everything. Back when it was the entire extended family at my parents, there was always stuff you never even SAW.

But I think last year we started a new tradition for Christmas dinner, when I learned that a lot of people serve prime rib roast. I have so much choice cuts of beef, there will be no turkey this time.

Sausage gravy and biscuits almost ready.

Get fish out of the brine and in the smoker.

Steam the shrimp.

Make dinner rolls.

Plate it all up and head to sister's home.

I'm just finishing my b'fast and coffee. Trying to get motivated to start prepping and you've been at it for ... what, hours? already?
