I was in Shoppers a while back and took my booty to the check out register and the Grocery transfer Technician (cashier) had no idea what an artichoke was. He held up the bag and said "What is this?". Same thing one day with an egg plant. Tonight at McKay's I had a parsnip, same deal.

So Boy has a pal staying over tonight and I made dinner and it included Brussels sprouts. He asked "What the heck are those?"

So all this came together in my head and now I wonder what people eat. Are vegetables at risk of becoming extinct from tables?

They are if all people eat is fast food! :lol: I've had similar experiences - where the Things tell me some of their friends didn't know what this veggie was or that one, etc. I've had all the veggies you mentioned, and except for artichokes have prepared them for my kids, as well.

BTW, how do you prepare artichokes? When I lived in Italy, I used to visit a neighbor in our building every day in the summer, and helped her prepare their big daytime meal. She used to make stuffed artichokes all the time. I think I ate them once in a while, but seem to recall that they were bitter. I haven't had them in ages.

DID YOU KNOW that whatever veggie you take to the checkout at Whole Foods, no matter how strange or obscure, the cashier knows exactly what it is? Sometimes I try to test them - I'll take up, say, Swiss chard. And the checker will say, "Ooh, yummy! You should wilt it with sauteed garlic and toss it with linguine, then give it a shave of pecorino."

Where is Whole Foods?

I steam them and either dip them in salt or sometimes melted butter with hot sauce. I think RoseRed eats them with mayo. I've never actually made anything with a fresh artichoke because I think they're good all by themselves.

Where is Whole Foods?

I go to the one in Annapolis.

We eat the "plain jane" veggies.. carrots, corn, green beans, peas, etc. I don't cook well enough to use the "fancier" veggies. :lol:

I'm about ready to try tunips again after being forced to eat them as a kid. I don't think I've ever had a parsnip. Maybe I'll go crazy and try those too!

I think it has a lot to do with foods people were exposed to when they grew up. I don't recall being served parsnips or acorn squash but I know what they are. Have to admit I've never cooked either on of them.

I did a lot of cooking like fried chicken, fried pork chops, mashed potatoes, homemade gravy, string beans, lima beans, leafy greens like collard & kale, and I love brussels sprouts, although I wouldn't eat them as a kid. I still make homemade macaroni and cheese which most people don't do anymore. I'd rather eat freshly prepared food than the quick-fix alternatives that are usually filled with preservatives and chemicals.

The folks who work in the grocery stores I thought received training on vegetable recognition? At least I know Giant Food used to train their people.

I love turnips. I love parsnips. I love rooooootabega. About the only veggie I don't like is lima beans, which isn't a veggie anyway.

Roast in the crockpot or GodPot, with root vegetables. Yum yum!

I am a roooooooootabega fan myself. I don't know why but I have just never cared for turnips. Lima beans are great!

Peel and cut into ~1" chunks, cover with water, bring to boil, drain. Add butter and salt and you have something fit to eat. :yum:
