What's for dinner?

The husband put a 12 lb brisket on the smoker at midnight. Hope it turns out as good as Vince's used to be! It sure smells awesome outside! I made a huge pot of collards & black eyed peas and we have friends bringing home made potato salad, deviled eggs, desserts and snackies.
We haven't entertained in years and I am excited to have a house and yard full of people (like the olden days!) There should be between 9-13 people

Had a rack of ribs soaking in apple juice for 2 days, just put a dry rub on them, salt, brown sugar and Carolina spice blend. Going on the smoker soon, then finish on the grill.

I'm glad you posted this. It reminded me that I've got to go rub my rack.

I never got to try his legendary brisket. The one time I had a shot was at a party in Vrai's backyard. But by the time I got to the table with the brisket, it was all gone!!! In like ... seconds!!

I had a really wonderful meal at Mission BBQ in Annapolis recently....I ordered the moist brisket platter.
I don't know if the place in St. Mary's County is as good.

It's not bad, but def not 'made at home'.

Made a couple of sides. Deviled eggs, baked beans, corn bread, and found an interesting recipe for grilled cheese.

Make a garlic oil by heating EVOO in a pan, and brown some fresh garlic in it. Spoon it over a solid block of aged provolone, add fresh ground pepper, paprika and oregano. Supposed to be grilled on a hot plancha, don't have one so using a griddle. Brown on both sides until edges are crispy, inside gooey. Looking forward to trying this.

I'm glad you posted this. It reminded me that I've got to go rub my rack.

Next time they get a deeper rub. It's my own concoction, so it's on the spicy side and I know Mommy Dearest has a low heat threshold. They turned out good enough that my "friend" enthusiastically accepted the doggy bag I offered. For that alone, the effort was well worth the outcome.
