When I eat lamb, it is usually with mint jelly. 😋

But tonight it was SCS from Capn’ Pats.

The lamb roast was rubbed with virgin olive oil and then garnished with freshly chopped garlic and rosemary before it went on the smoker. Mint jelly is a requirement, of course...
Speaking of olive oil, when’s the next delivery?

Mostly I use mint to make an ancient Persian summer drink called Sekanjabin.
It is basically a sweet and sour simple syrup with mint.

Prep Time: abt 5 mins Cook Time: abt 40 mins

Ingredients:: 4 c water, 4 c honey, 1 c apple cider vinegar, 1 large bunch fresh mint

Instructions: Stir honey and water together in a saucepan. Turn heat to medium and slowly simmer while stirring until the honey is completely dissolved. Stir in the vinegar, reduce heat to low, and simmer about 20 minutes, stir every few minutes. Remove from heat. Submerge mint in hot syrup and cool to room temperature. Remove and discard mint. Package in a Mason jar and chill in the refrigerator.

Use: 1/2 c syrup stirred into 2 c cold water

I also like to make a Colonial era drink called Switchel.

Here's my version: Into 1 gallon water stir 2 c maple syrup, 1/2 c apple cider vinegar and 1 Tbsp. freshly grated ginger

Boomerangs is in our rotation- have never had a bad meal there.

Why yes, LOTS of touche, but no feely just yet. We've been friends for over 40 years, it's going to take a while to make that transition, but at our age that's not the ultimate goal, just an added benefit. 😜
Sometimes I think it's better that way when you get older. I've been steadily dating a local guy for nearly a year now. He was newly divorced and just looking for someone to talk to and run around with and I really can't just go live with someone because of Joey. We live five minutes away from each other. He's an amazing companion and my best friend and the benefit thing. Only we both found out we cared about each other so....that's weird at our age. I like it. Good friends in the beginning is always best.
