What's for dinner?

Had a rack of ribs soaking in apple juice for 2 days, just put a dry rub on them, salt, brown sugar and Carolina spice blend. Going on the smoker soon, then finish on the grill.
This worked out really well, best tasting ribs I've made to date. But I was getting impatient and hungry, so I took them off a bit sooner than I should have. Not as tender as I would have hoped. Query: what happens when you put already cooked and stored ribs back on the smoker?

So tonight was an experiment. Had half a rack leftover, been in the fridge a couple of days, put them back on the smoker at 200* for another 5 hours in hopes of tenderizing them. It worked. Ribs were still perfectly moist (sprayed them with apple juice periodically) and tasted just the same, but much more tender.

If pressed for time, they could be partially cooked, and finished later and still come out great.

Barbecue chicken, mashed potatoes, southern style green beans w/bacon, cornbread, sweet tea, and peach cobbler for dessert. All homemade and amazingly it turned out great.

ALDI Pizza.

It was - ok.
Do you remember which one? They have a bunch of different pies.

If you ever see it in Aldi, try this one. I was impressed, and I'm not impressed by frozen pizza very often.

We actually did the not frozen ones they have near the front. I got the extra meat and the cheese.

Since they NEVER put enough cheese on them things, we added mozzarella - my wife added leftover crumbly bacon to the meat one - and put half ham and half onion on the cheese (per different appettite preferences).

They were all kinda bland, still and well - we won't be buying them again.

Dunno about the chuck roast but they do a sirloin roast that I kind of like, and haven't seen lately.
