Leftover ham & cabbage...again...3rd night in a row...don't want to see another ham or cabbage...EVER...!!

When I have that much leftovers, I make individual portion freezer meals to eat later for lunch or that night you just don't want to cook.

Tonight I was going to make spaetzle, but I've changed my mind. I'm going to take a nap instead and the Giant can make spaetzle, or order a pizza.

I didn't have the cabbage last nite, just couldn't do it again. Sliced some ham, potatoes, onions. Sprayed a small casserole dish with Pam and layered the potatoes, onions and ham, two layers, topped with cheddar and Mexican cheese, baked for about an hour, added some peas and dinner was done and tasty.

I've been stuck home withy sick kid for day 2 and last night I put a roast in with carrots and potatoes and husband was all "meh" :ohwell: That #### was amazing and he could careless. :mad:
 
Ok, not dinner, but ...

French toast made with thick cut slices of Challah bread and my secret egg mix, bacon and chocolate coffee. Topped with butter and Vermont pure maple syrup.

Good way to start a day.

Weekly Sunday dinner for FIL. Tomorrow is hamburgers and brats on the grill with fixin's. Baked beans and green beans with smoked ham (still left from Easter). The best part! Brownies or pound cake with butter pecan ice cream and caramel sauce, or both! I hope everyone has a great Sunday!

I like your FIL's menu, 2 of my favorites. Brats and cheese burgers cooked on the grill.

We try to have my hub's dad over every Sunday that we can. Hub's mom died 4 years ago, and he lives alone in Benedict. Apparently, he lives on frozen entrees the rest of the week. So, I send him home with plenty of leftovers. And, he loves dessert, and always brings his cake carrier to take it home. My husband always plays the game with him saying 'no dessert' and then hides it from him. FIL gets a kick out of that. :lol: He is such a dear man.

Oh and we tried something new today, and boiled the brats in beer for 20 minutes before grilling. It really did make a difference and cut the cooking time to just 6 minutes on the grill and they were much more moist.

We had BBQ at Schoepf's in Belton, TX with my son, his girlfriend, and her daughte. The brisket was amazing, the ribs were a little chewy. Leftovers for breakfast!

We did Greek Pita's Bar I had grilled chicken, tomatoes, feta, cucumbers, red onion, & kalamata olives as well as homemade Tzatzki to stuff them w/! I also did a few Mediterranean Grilled Flatbreads. It was so delicious! Perfect spring dinner :yum:
