Okay now I'm stupid here. I need to know amounts please :iamstupid:

I do 1 cup of salt, 1/2 cup brown sugar, 1/2 gallon of cider, 1 onion sliced, 1 whole head of garlic sliced in half, about 2 Tablespoons of peppercorns...if you dont have those just do 1 teaspoon or two of pepper, and 2-3 lemons quartered.

Does it make a huge difference? Do you use just salt and sugar? or I found a recipe for one that calls for vegetable broth, salt, rosemary, sage, thyme and water?

I think it makes a huge difference. There are a million and three different brine recipes. The one lovinmaryland posted sounds terrific!

There's a ton! I just compiled a few different recipes to come up w/ one we liked best. Once you do it you'll be hooked and come up w/ your own combinations! I've got an asian brine, an italian brine, :blahblah:

Roast eye of round. Baked potato. Homemade gravy (always a must for hub, so I add beef broth to the roast pan; very little fat) and salad. For anyone that is not familiar with this perfect every time roast recipe....

Preheat oven to 500. Cook roast for 7 minutes/pound. Turn oven off and let sit for 2 1/2 hours. Do not open oven. Perfectly medium rare every time. Adjust according to your taste of more rare, or more well done. Easy!

That sounds fabulous. I've been on a thing lately where all I seem to want is soup and sandwiches, but I can't do that every night because the giant may accidently starve to death. :drama:

It's a draw for me, I make stuff all the time that I know my husband will turn his nose up just because I want to try it !!

Hot Italian sausage - grilled, then sliced. Sauteed green pepper & onions, with some yellow & zucchini squash in a little butter & some EEVO. Added the sliced sausage and some cooked whole grain brown rice and made a stir fry of it. NO heavy sauces - just all mixed like that and sauteed in the electric skillet. It was very good!

Chicken Parmesan, Bucattani tossed w/ olive oil, red pepper flake, garlic, broccolini, & freshly grated parm, & blue cheese wedge salads. It was amazing!

That sounds delish! I make chick parm but never put it with kind of side. Will try!

Quiche with the left over Easter ham, a little bacon, a little sausage, and cheese, and salad. I use Egg Beaters instead of real eggs. Who knows which is healthier for you!
