Dinner

I've got some NY Polish kielbasa that I'll grill outside, put it on a sub roll with spicy mustard and 'kraut.

I bought a #### ton of fresh tortellini's from Costco...forgetting that everyone in my house HATES tortellinis! They like raviolis :doh: So I think I'm going to par cook them and then do a lasagna w/ them. That or I just made some pesto over the weekend I might just toss them w/ that and call it a day!

I have 2 lbs of ground beef, and no inspiration to do anything with it. And, no, I don't want hamburgers/cheeseburgers or meatloaf.

Any ideas?

stuffed with blue cheese a la Salisbury Steaks! with that creamy mushroom wine sauce! Or I usually make my beef stroganoff with ground beef :lol:

Had ribs, which were okay, but what I really wanted was booze so I had a bunch of Ruby somethingoranothers. They were delicious.

Grilled pork chops. Homemade stuffing from saved bread ends, onions, and celery that needed to be used, and salad. I really try hard to not waste any food. My parents were all about children starving in the world. It is interesting what you retain from your upbringing, and bring into your adult life. :smile:

Wellllll since it's going to be lovely out today/this evening we're grilling something! I'll stop at the store on my way home but I'm thinking steak, asparagus and potatoes :yum:



To clean though? I mean dayum. Whatevs, I'm only doing your dishes though. The other island peeps are on their own! :lmao:

I REALLY need to get my grill out of the garage, I've had chicken breasts marinating in Italian dressing since SUNDAY !! it'll be SO yummy !!!!! and I have alfredo noodles to make with it !!!!!

speaking of dinner, has anyone ever brined a turkey? I want to for Easter dinner on Sunday and want to know how hard/messy it is??

Does it make a huge difference? Do you use just salt and sugar? or I found a recipe for one that calls for vegetable broth, salt, rosemary, sage, thyme and water?

I do mine w/ apple cider, brown sugar, quartered lemons, sliced onions, 1 head garlic split in half, salt, peppercorns, & ice. It makes a HUGE difference. Super moist! I heat all the ingredients (minus the ice) until disolved. Then I pour that in a cooler w/ an entire bag of ice or my entire tray of ice from the freezer. Once its cold I put the turkey in for 24 hours. Check it and add ice if you need too. I bought a cheap cooler that is specifically used for brining.

The only downside is you cant use the drippings because they are really salty. Otherwise its absoluely delish! Oh I also roast my turkey upside down...so all the juices drip down and keep the breast extra moist. Its totally AHHHHMAZING!
