I had some Italian beef left so I made street tacos to finish it off. This coming week I'm going on a stuffed baked potato binge.....

I found an interesting recipe for smoked wings, so that's tonight's dinner. Marinating in dill pickle juice, then coat with lemon pepper and baking powder. Didn't call for it, but I added garlic and onion powder and ground red pepper.

These were even better next day. Last night they were a bit heavy on the seasoning, and could have been cooked a little more. They were cooked thru, but not quite tender.

For lunch, I wiped off a lot of the seasoning and put them in the oven for 30 min @ 325*. They were much more tender and not dried out. Still too much red pepper, so less of that next time. And since the re-heat worked out really well, I'm thinking I can make a mess of legs/thighs and freeze them. Legs/Thighs because the price of wings is absurd now, and I have a freezer full of legs and thighs.
