this is almost exactly how I do it, although I've never seen a recipe with vinegar... I also made this in the crockpot yesterday. Except I forgot the beer....and any liquid actually. Half way thru I added some beef stock and half a beer just to be on the safe side once I realized my mistake. Still turned out ok.I dont see why not! My method is to put carrots and quartered redskin potatoes in first, use about 2.5 cups of water to cover those and add 1 cup of AC vinegar. Add the corned beef in next, fat side up, add 1 bottle of Stout beer, sprinkle in pickling seasoning, cook on low about 8 hours. One hour before turning off the crock pot, add the chopped cabbage to it. Thats all there is to it. Comes out tender and flavorful and the best part...the leftovers the next day are even better!!
Oh and I don't put the potatoes in there, I prefer them mashed so I made some garlic mashed red potatoes. Also forgot to unwrap the soda bread I bought my poor husband...dinners have been interesting lately working with 3rd trimester pregnancy brain.
