I dont see why not! My method is to put carrots and quartered redskin potatoes in first, use about 2.5 cups of water to cover those and add 1 cup of AC vinegar. Add the corned beef in next, fat side up, add 1 bottle of Stout beer, sprinkle in pickling seasoning, cook on low about 8 hours. One hour before turning off the crock pot, add the chopped cabbage to it. Thats all there is to it. Comes out tender and flavorful and the best part...the leftovers the next day are even better!!
this is almost exactly how I do it, although I've never seen a recipe with vinegar... I also made this in the crockpot yesterday. Except I forgot the beer....and any liquid actually. Half way thru I added some beef stock and half a beer just to be on the safe side once I realized my mistake. Still turned out ok.

Oh and I don't put the potatoes in there, I prefer them mashed so I made some garlic mashed red potatoes. Also forgot to unwrap the soda bread I bought :doh: my poor husband...dinners have been interesting lately working with 3rd trimester pregnancy brain.

The vinegar I've always used, never had a recipe call for it, but, that the way my father fixed it.

Thanks. They were quite good for as rusty as I am at grilling. Flipped after 15 minutes, taken off at 30. Next time I'll try 10 and 25. The hickory is definitely strong. It numbed my lips. I used my own rub that I've lost the formula for, unless my daughter finds it in wifey's recipe box.

The grocery store was completely out of all meat yesterday....except for prime grade ribeye steaks. SCORE! We had them last night and again this evening with charred brussel sprouts.

That was the same thing I found a few days ago.... all meat gone except a few prime t-bones. I scarfed them up and vacuum sealed them.
