Cornish game hen, roasted veggies, green salad, biscuits.
Game hen is just perfect now, no left overs. A chicken is too big and kids wouldn’t get quails yet.

Gosh I’m starting to enjoy those one skillet meals for Sunday dinner — just throw it all in the oven and perfectly done meat and veggies come out.

How do you cook your parsnips? I bought a basket of stuff at Chesapeake Bounty and some were orange carrots and what I thought were lighter colored carrots (they have variations of many veggies I have never seen before like pink beets that I didn't really like) I was going to grate a lighter color carrot for a salad and smelled it and it was a parsnip.
There are two and I was going to saute them with a couple carrots thinly sliced in butter. But I am curious what you (and others) do with parsnips?
that's a great way to cook parsnips. Sometimes my mother would do a roasted veg medley of parsnips, carrots, and potatoes. Sometimes she'd boil them up with potatoes and mash them. Made the mashed potatoes sweet and spicy, delicious!

tonight I'm making cornbread-crusted pork cops with lima beans and broccoli.
