that's a great way to cook parsnips. Sometimes my mother would do a roasted veg medley of parsnips, carrots, and potatoes. Sometimes she'd boil them up with potatoes and mash them. Made the mashed potatoes sweet and spicy, delicious!How do you cook your parsnips? I bought a basket of stuff at Chesapeake Bounty and some were orange carrots and what I thought were lighter colored carrots (they have variations of many veggies I have never seen before like pink beets that I didn't really like) I was going to grate a lighter color carrot for a salad and smelled it and it was a parsnip.
There are two and I was going to saute them with a couple carrots thinly sliced in butter. But I am curious what you (and others) do with parsnips?
