Thanx for the reminder. Missed it past few years.

Haven't tried a meatloaf on the grill/smoker. Sounds good.

Got some "ground pork" to make meatloaf last week, looked a bit pale. It was nothing but fat. From 1lb of ground beef and 1 lb of "pork", I drained off over 2 cups of fat. Made 2 cakes of suet from it.
Its my first on a pellet grill myself. Its interesting on the differences between the oven, charcoal, gas grill and a pellet grill.
I was just reading and next time I'm gonna soak my bread crumbs in milk before mixing them in. hopefully it adds more moisture and a bit more "fluff" to the loaf.
I like the pellet so far for the main difference is, I can walk away for hours and it holds a steady temp.

I use bread crumbs and oatmeal. Makes it fuller.

I was served cheese, crackers, and spinach dip. At 2230 she decided that wasn't enough and threw together some pasta dish. Too late for me to eat all those carbs, so I passed except for a taste. Have I said we leave in 2 different time zones? 😆

Tonight I made baked chicken breasts seasoned with Bell's poultry seasoning (a New England equivalent to Old Bay) and lemon-pepper,, accompanied by rice with sour cream and steamed spinach with lemon juice and olive oil.

I got a pizza on Monday and have been eating off it since then. I just finished the last two pieces and will probably have some cheese and crackers later.
