Edit: It's corned beef hash not home fries. I'm gonna die here before I eat.

All she has is keto ketchup and I'd be afraid she might be offended. I can't risk it, so I'll have to take some leftovers for testing purposes.

Her animals adore me, so I'm in. :yay:

Keto? I don't Prch, girls who do keto don't normally do blueberry pie or strawberry shortcake or lemon blueberry sour cream pound cake. And what's life w/o an overdose of sugary treats on a nightly basis?

I gots the sugars, so I can't have them any more. šŸ˜„

And, we just finished breakner or supfast or whatever you wanna call it. Scrambled eggs with chunks of country sausage mixed in were the main dish. The potatoes in the hash were the only cheat, I think.

So sorry to hear that. That's precisely the reason I don't go to doctors. They always tell you stuff you don't want to hear.

We visited her aunt for the latest stop on the "Introduce PrchJrkr to the Family" tour and someone in the neighbourhood was grilling beef. A craving took over, so...

Charcoal grilled New York strips (rare) from Bradford's, air fried cauliflower, and Keto friendly bread and butter. This was all washed down with a 2023 vintage Deer Park natural spring water.

Looking for a smallish aprox 8-10 lb. stuffed ham recipe that is not spicey, anyone have one?
This is my basic recipe for a half ham, divide it in half for the size you want. Youā€™ll probably want to leave out the cayenne to lose most of the heat. Also, hams have gotten less salty the last few years so Iā€™d increase the salt a little.
Itā€™s going to be boiling for a while so if you have a way to cook outside itā€™ll keep the house from smelling like ham and cabbage for a week.

Stuffed ham
20 lb. corned ham boned, skinned and tied (should be about 15 lb. dressed)
2 lb. kale, fresh or frozen
4 medium heads cabbage sliced into 1/4ā€ slices
3 large onions
2 tbsp mustard seed
2 tbsp salt
2 tbsp crushed red pepper
2 tbsp pepper
2 tbsp ground cayenne pepper
Cheesecloth, game bag, pillow case (something to hold the ham and stuffing while boiling)

Chop all vegetables coarsly and mix in all of the seasonings.

Make holes in the ham, 2 inches wide going into the bone cavity (stab it).

Place the ham in the bag.

Stuff the stuffing into the prepared holes and bone cavity until it will hold no more and then place the remainder around he outside of the ham.

Tie the bag tightly and place in a large pot of boiling water, boil for about 15 minutes per pound.

Let ham cool in the water for several hours and then refrigerate overnight, the next day slice thinly.

Game bags are cheesecloth bags that you put a deer carcass in to keep flies and junk off of it while you take it in for processing, they work perfectly for holding the ham and extra stuffing that didnā€™t make it into the ham. Tackle box or Walmart usually have them.

I do all the work in the sink, chopped veggies and spices. Mix with hands, tasting until you like it. (Heat will mellow some as it boils.)

Plop the ham on top (that bag sounds great, so plop it in there), cut your holes and stuff them full of the greens mixture.

The above recipe is almost mine. My formula is cabbage 1/2 weight of ham, enough kale to make it a pretty green.

Merlin, do you use the weight of the ham for timing or ham+cabbage?

Allowing the ham to cool in the water will keep it moist.
 
Top
